sharonAhh, I love a nice fresh pasta salad with al dente noodles like you. It's true - its something so easy to make in theory, but also easy to screw up. Yours looks great and I like the use of shredded roasted chicken.

I love concert venues with a BYO atmosphere. It's amazing how elaborate some of the spreads can be.

JennDZ_The Leftover QueenOh wow, that looks like a wonderful pasta salad! I just love using avacado in cold salads like this - it really adds something - and especially with the chipotle! YUM!

KimDonald, this looks like a great dish! I too have made my share of mayonnaise glop. I remember Chastain from my 20 some years living in Atlanta, and this is the perfect dish to take with you. It is a lovely evening and one of the highlights of summer.

NikkiWhere do you get your chipotle flakes? I just discovered them last year. They came in a box set I got from Sur La Table. The pasta looks great. If I saw it in a cafeteria, I'd definitely get an ounce or two :) I need to look up the Chastain Ampitheatre. If the venues are as diverse as you say they are, I might put it on my roadtrip docket.

I think that's a substantially yummy looking repast, but if you'd fedex a couple of kilos I could give you a definitive answer.

I'm not a huge fan of rotini, fusilli or most other pastas of that sort when they're cold (except at 2AM when I GOTTA haz something!). I would do the same recipe, substituting cous cous, brown/wild rice/orzo or quinoa--in fact I will do that when I get back from my travels to the Mountain West as they are calling the very tall hills these days.

Great recipes, here, always.
