DonaldClaudia - Those attachments are da'bomb aren't they? Way better than a hand crank where you need three hands. And yes, bacon fat, eggs, cheese sauce, mmmmmm. Can only have this once a year!

Ruth EI love pasta and would love to have homemade someday but I'm not sure it would be a wise investment making my own pasta right now seeing as it's only me in our house who likes pasta it may be a waste of having a machine and even a waste of dough.... but I dream of the day when we have a family and the kids love pasta (please Lord!!!!!) so I can do this and justify making a batch.

Anyways the carbonara looks really tasty, I haven't had it in a while so may just have to do it again soon.

sharonDonald, welcome back! Such a great post, to boot. :D The last time I made homemade pasta was under the supervision of a family friend from Italy when I was about 8. Perhaps its time for me to take another stab? This looks sinfully delicious.

KimDonald-
You made it look so easy and so much fun to boot. Guess I am going to have to trust you on this one and get an attachment for my KA,(which btw took me 5 minutes to break the code on those initials). But I did it, and plan to arm my kitchen with one of these. Beats the hand crank, especially now that the kids are grown and gone. Don't think there is a chance in convincing the husband it really is more fun to turn the crank than watch sports. New guismo it is, thanks to you.
Don't you just love technology?

DonaldRuth - Wow...you're the only one in your household who likes pasta? Maybe too many Chef Boyardee meals in his youth? I tell ya, fresh is really good and too easy not to do.

Kat - Thanks! Be careful with the dish though, it doesn't look like it, but it is really, really rich.

Sharon - Thank you. I really didn't believe how easy it was to make fresh pasta with the KA attachments. I used a hand crank once in a class I took at Whole Foods and I wasn't really thrilled with it. You need a third hand with the crank.

Kim - Trust me, get the attachments. They are a welcome asset in my kitchen now. I just bought a ravioli mold and it's off to make crab and lobster ravioli!

NikkiI don't have attachments for my mixer to make pasta. When I get back in the kitchen next week I'm going to make some pasta by hand. I've been wanting to do that for some time now. I'll use a pastry cutter and knives maybe, but no modern accoutrements.

LindseyAZDonald,

Yum. I love pasta carbonara. I made some a little while back and added some sauteed onions to it. Please do not let me confuse you, this is one of like, six things that I actually make. Thanks to my mom and all of your blogs I am wanting to get in the kitchen a little more.

Homemade noodles? Not yet. I'll be ok with Barilla for a little while longer. :)

We are finishing up a video on hand-cut noodles and once you make them, there no turning back!

DonaldNikki - I feel ya. I wish I had a disc for rigatoni. You taking the time to roll and cut by hand is impressive!

LindseyAZ - Hi! Thanks for stopping by. Your mom is an amazing cook!

Bellini - This was a tasty dish. You really have to make your own pasta, trust me!

WoR - Hey! Thanks. I'll have to check out your video. I saw the others on your blog. You guys are destined for TV.

We Are Never Fulloh my god... guan-freaking-ciale. obsessed with the flavor. i'm going to have to check out that mail order place. you should try to make al'amatriciana with it too - it's traditional in there as well.

we smuggled some in from italy last summer and used it for this dish: http://www.weareneverfull.com/im-dreaming-of-some-cured-pigs-cheeks-perciatelli-alamatriciana/

if you have any left, give it a try! it's DELISH.
but this carbonara looks awesome too. and thank you... THANK YOU from the bottom of my heart by not adding cream to this. i even saw GIADA doing it on her show and i was so irritated she didn't even bother to tell viewers it's not authentic!

also, kudos for making your own pasta! YUM...

SusanDon't you just love making your own pasta? I am also a newbie to the process and can tell you it is addictive. In November I'm going to be cooking in an Italian kitchen and learn from a pro. Can't wait!

Bald Daddy'sHas to be one of my all time favorite pasta dishes. Sampled it from many different regions in Italy. I think I will have to give the new pasta machine a workout and give it a go.
