ErinThat looks wonderful! I've actually never seen this recipe by Heidi so thank you for pointing it out. I have been known to do really bad things to sweet potatoes like cover them in cinnamon and sugar and bake the concoction topped with marshmallow. This sounds like a much healthier alternative :)

I've got sweet potatoes on the brain. I make them at the coffee shop. I have a few leftover and I need to make something with them. I can't do a mash, but Something with vanilla sounds wonderful...

Robinsue: Prolly not linguine and clams, but it is a versatile side dish, I think.

Melissa: I think so too for TGiving. It is a bit away from norm, but still with tradition.
